Okay, so perhaps my Chef Fabio Viviani inspired, via Cravings of a Lunatic , suggested recipe via Foodie Stuntman now my adapted recipe hasn’t made the news YET, but you never know!
What I CAN share is today it is HOT, HOT, HOT in this Adelaide #heatwave!

If you will allow me to digress for a minute, when I was in kindergarten (called kindy here in Aussie lingo), I was invited to our next door neighbor’s house to watch the Wizard of Oz (one of my all-time favorite movies; you will understand WHY shortly! )
Our family had a black and white television. (yes readers B.C.; Before Color )
I never knew WHY people used to get all excited when Dorothy landed in a place where she said, “Toto, I don’t think we are in Kansas anymore!”
To me, Dorothy’s house was in a twister; was in black and white. (Auntie Em!”…It’s a twister! It’s a twister!… ; sorry know EVERY line from the movie. )
When Dorothy landed in the land of Oz, (sort of how I got to COME to the Land of Oz lol) to me, it was STILL in black and white.
I was curious HOW different the movie would be on our neighbor’s tv!
Let’s remember I was only 5!
WELL, I S-Q-U-E-A-L-E-D with delight (see, I squealed even back then too!; B.C. Before Cooking) when I saw when Dorothy landed in the land of Oz!
I have never seen such MAGNIFICENT, beautiful, sparkly colors of the rainbow, MUCH brighter thank my 64 pack of Crayola Crayons!
I hope for my “more mature” people reading this, YOU are laughing too and YOU remember YOUR Crayola crayons and the colors too! FAST FORWARD!!!

When I first saw Kim’s Bucatini All’Amatriciana: Burning Down The Kitchen with Crazy Foodie Stunts with her interview of DB from Crazy Foodie Stunts mentioning his Guest Post at Fabio’s Kitchen Academy: Watermelon Gazpacho Shooters, I “knew” this recipe was “on the list!”
As you know by know, I am also PASSIONATE about minimizing food wastage like in Yelp Adelaide Cooking for a Cause – OzHarvest and OzHarvest Be a Souper Hero Feeding the 5000 Event.
Thank you Chef Fabio Viviani for your recipe that inspired me!
Here is my slightly adapted recipe using my new Thermomix.
For my readers who do have a Thermomix, everything can be placed in a blender and puréed.
- 1 medium size watermelon; rind removed; include seeds
- ½ continental cucumber, cut in chunks; peeling (optional)
- 1 medium truss tomato, chopped
- 2 radish, chopped
- 2 red chilli, cut in pieces
- ½ red onion, cut in quarters
- ¼ cup fresh lime juice
- ¼ cup + 1 tablespoon olive oil
- 3 tablespoons red wine vinegar
- 2 anchovy fillets, in oil
- 1 teaspoon capers
- ground white pepper to taste
- lime slice (optional but recommended)
- paper umbrella (optional by recommended)
- Place all ingredients in the Thermomix; 30 seconds, speed 10; or until desired smoothness.
- Season with pepper to taste.
- Refrigerate for one hour.
- ENJOY!
“What will you do with the watermelon rind?, I “hear” you say?
That is a VERY good question, especially today!
