Thanks to Karen From Lavender and Lovage in issuing this month’s herb challenge: MINT!

Last month’s Rosemary challenge was interesting too!

Perhaps you remember Cooking with #Rosemary March Challenge where I created Joanna’s Crock Pot Rosemary and Lavender Pull Apart Rolls!
Crockpot-rosemary-rollsI have HEAPS of mint in my garden and seems like it is one of the few plants or herbs that I seemingly can’t kill!

Let me tell you, it is a thrill as “the green thumb gene” was certainly not passed onto me!

Mint aka Mentha is a close relative “of spearmint, peppermint, curly mint, ginger mint, apple mint, pineapple mint, eau de cologne mint, water mint, pennyroyal and  Corsican mint.”

And that “the name” mint:

“derives from the nymph Menthe, who was turned into a plant by the goddess Perserpina when she found out that Pluto was in love with her.

Greeks used to clean their banqueting tables and added to their baths to stimulate their bodies.

Romans used it in sauces, as an aid to digestion and as a mouth freshener.

Romans brought mint to Britain.

Used by monks in medieval times for its culinary and medicinal properties
Most likely taken by the Pilgrim Fathers to America”

My name is Joanne, aka Joanna, aka mickeydownunder, aka FANG and I must confess I have never made this bread before.

As no recipe is really an original, I was curious when I came across Garden Mint and Corgette Bread: Thermomix: Cheaper than Chips via Teacher’s Recipes.

Thermalina (my Thermomix) was as excited as me when she was able to participate in this month’s mint challenge!

With my slightly adapted recipe based on my food lifestyle, Does Mint, Zucchini, Sun-Dried Tomato #Bread Have Your Curiosity?

Mint, Zucchini, Sun-Dried Tomato #Bread {Thermomix}

Serves: 8 - 10
Ingredients
  • Ingredients
  • 150 grams zucchini; chopped in pieces
  • 3 large tablespoons mint, fresh; leaves only; chopped
  • 50 grams sun-dried tomatoes; drained
  • 220 grams spelt flour
  • 280 grams "oo" strong flour
  • 280 grams water
  • 8 grams yeast
  • 10 grams salt
  • oil for bowl
  • extra flour for dusting and kneading
Instructions
  1. Instructions
  2. Put zucchini, mint and sun-dried tomatoes in TMX bowl. Speed 6.10 seconds.
  3. Scrape down bowl; repeat until desired consistency.
  4. Add flour, yeast and salt in TMX bowl on top of mint, zucchini, sun-dried tomato mixture. Speed 4. 7 seconds.
  5. Add water. Speed 6. 5 seconds.
  6. Knead on dough setting for 5 minutes.
  7. Place dough in oiled bowl; cover with plastic wrap and allow to rise minimum 1 hour. (See Notes)
  8. Remove from bowl, please dough in TMX bowl. Speed 4. 10 seconds.
  9. Remove dough onto a floured flat surface; adjust dough if necessary by adding flour; knead until dough is smooth and pliable.
  10. Place dough in oil sprayed choice of pan or tin.
  11. Pre-heat oven to 250C.
  12. Place bread in the the oven; immediately reduce heat to 180C.
  13. Bake for 30 minutes or until golden brown and bread "sounds hallow" and done.
  14. Remove bread to wire rack to cool.
  15. ENJOY!

Notes
If dough appears too watery, you can add flour after risen and knocked back.
Recipe can be easily converted to Non-Thermomix by using a stand up mixer.
